Bar Monte is giving Sunday lunch the Roman treatment.
From 12pm to 3pm every Sunday, three of Lazio’s most iconic pasta dishes take centre stage: Carbonara, Amatriciana, and Cacio e Pepe. Each is offered at $25, made with restraint, precision, and an understanding that good pasta doesn’t need dressing up.
There’s no cream in the carbonara, no shortcuts in the amatriciana. Just guanciale rendered properly, Pecorino with bite, tomatoes cooked down till they taste like the sun, and pasta with the right snap. This is Roman cooking the way it should be: tight, salty, satisfying.
A glass of house wine takes the full experience to $35. Italian, of course. Bright, textural, and chosen to match the dish and not overpower it.
